Pumpkin Pie

Are you trying to keep an eye on calories this holiday but allowing yourself to enjoy the holiday? Then these crustless individual pumpkin pies baked in ramekins are the ideal dessert recipe. This delicious traditional holiday treat is lower in calories thanks to limited ingredients and no crust (saves 120 calories/piece), which makes this treat less than 200 calories/serving.

This recipe combines a fluffy pumpkin filling with fall spices. It is so delicious you will not notice you are eating fewer calories. Plus, it's packed with nutrition, providing an excellent source of Vitamins A, along with others like C, & B vitamins, and minerals like copper and manganese.

Ingredients:

  • 1 (15 oz.) can of pumpkin

  • 1/2 cup sugar

  • 1 tsp. cinnamon

  • 1/2 tsp. ginger

  • 1/4 tsp. nutmeg

  • 1/3 cup egg beaters

  • 1 (12 oz.) can of evaporated milk

Directions:

  1. Preheat oven to 325°F.

  2. In a large bowl, combine pumpkin, sugar, cinnamon, ginger, & nutmeg.

  3. Using a fork slowly, beat in the eggs.

  4. Add in the evaporated milk and mix until combined.

  5. Carefully pour the mixture into a liquid measuring cup. Then evenly pour into four ramekin cups and place on a baking sheet.

  6. Bake for about 60 minutes or until a knife inserted into the middle of the pie comes out clean.

  7. Allow to cool on a baking sheet for 5 minutes, then transfer cups to a cooling rack. If ramekins become stuck onto a baking sheet, let it cool slightly and then add water. Wait a few minutes, and then remove using a spatula.

  8. Serve plain or with whipped cream sprinkled with cinnamon or nuts.
