Red, White, & Blue Crumble
Ingredients:
1 cup quick cook 1-minute oats 1/2 cup whole white wheat flour 1/4 cup brown sugar 1 Tbsp chopped walnuts (optional) 1 tsp ground cinnamon, divided 5 Tbsp butter (slightly softened) 2 cups Wyman's brand frozen Mango Berry Mix 1 cup fresh blueberries, washed 2 cups peeled & diced apples 2 Tbsp granulated sugar 2 Tbsp corn starch 1 Tbsp lemon juice
Directions:
1. In a medium bowl combine the oats, flour, brown sugar, 1/2 tsp cinnamon, & nuts (optional).
2. Cut butter into small pieces and add to the mixture. Using your fingers, gently work the butter into the dry mixture until small crumbs form. Place in a sealed container and freeze for 20 mins. while preparing fruit mixture.
3. Preheat the oven to 375°F. Using a cooking spray coat a 2 1/2-quart baking dish.
4. Place all the fruit into a large mixing bowl and sprinkle with remaining 1/2 tsp cinnamon, granulated sugar, cornstarch, lemon juice. Gently toss until coated.
5. Pour into baking dish and sprinkle dry mixture over fruit. Bake for 40 mins. or until apples are softened and topping is golden brown. Let sit to slightly cool before serving.
To serve, place plain or vanilla Greek yogurt in a glass and top with crumble. Or alternating layers of yogurt and crumble for a decorative parfait.
