Pumpkin Oat Scones

These scones are what October is all about. They can serve as a quick on-the-go breakfast option or anytime snack.

Ingredients:

Scones:

1 1/4 cup all-purpose flour

1 1/4 cup white wheat flour

1/2 cup light brown sugar

2 tsp. baking powder

2 tsp. pumpkin pie spice

1/4 tsp. salt

6 Tbsp. unsalted butter

1/2 cup pure pumpkin

1 large egg

1/2 cup 1% milk

1/4 cup quick cook oats

Maple glaze:

1/2 cup powdered sugar

1/8 tsp. vanilla

1 tsp. maple syrup

1 Tbsp. milk

Directions:

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a large bowl, combine both flours, sugar, baking powder, pumpkin pie spice, & salt.

3. Cut butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles crumbs.

4. In a liquid measuring cup using a fork to whisk the milk, 1/2 cup pumpkin, & egg until combined.

5. Form a well in the middle of the dry ingredients and add wet ingredients along with oats. Gently mix until combined. If the dough is too sticky, add more flour.

6. On a floured surface, turn the dough until smooth. Gently form into a flat disk. Using a knife, cut into 8-slices and place onto the prepared baking sheet.

7. Bake for 14 mins, or until slightly golden. Slightly cool on pan and transfer to a wire rack to completely cool.

8. Glaze - place all the ingredients into a small plastic bowl and mix with a hand mixer until smooth. Then, using a spoon, drizzle glaze over each scone.

Option instead of the glaze: In a microwave safe dish, place 1/2 cup semi-sweet morsels and 1/4 tsp of vegetable oil. Microwave on HIGH for 30 seconds, then stir. Heat for 15 second intervals, stirring after each time until the morsels are melted. Drizzle over scones and let cool before serving.
