Cinnamon Crunch Apple Muffins
Ingredients:
3/4 cup all-purpose flour
3/4 cup whole white wheat flour 3/4 cup white sugar 2 teaspoons baking powder 1/3 cup olive oil 1 egg 1/3 cup 1% milk 1 cup peeled & diced Granny Smith apple (Cortland works too)
Crumb Topping: 1/4 cup white sugar 1/3 cup all-purpose flour 2 Tbsp. butter, cubed Sprinkle of cinnamon
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). 2. Grease muffin cups or line with muffin liners. 3. Combine flour, sugar, and baking powder in a large bowl. 4. Place olive oil into a 1 cup measuring cup. Then add the egg and pour enough milk to fill the cup. Add to the flour mixture. 5. Fold in the apples. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
Crumb Topping: 1. Mix together sugar, flour, butter, and cinnamon. Sprinkle over muffins before baking. Bake for 20 to 25 minutes in a preheated oven, or until done.
