Vegetable Beef Soup
Ingredients:
1/2 Tbsp. olive oil
1 1/2 pounds of London broil or top sirloin steak cut into 1 in. cubes
2 pinches of kosher salt & 5-6 turns on the peppermill
14 oz. whole tomatoes (undrained & blended)
7 oz. stewed tomatoes (pureed)
4 oz. tomato sauce
32 oz. vegetable broth
1/2 yellow onion, chopped
1/2 Tbsp. sugar
1/4 tsp. kosher salt
1/2 tsp. black pepper
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
1 (12 oz. package) frozen mixed vegetables
Directions:
1. Heat oil in a Dutch oven. Place beef into the pan and season with salt & pepper. Cook until browned on all sides.
2. Add the remaining ingredients and bring to a boil and reduce to med-low for about 1 hour or until meat is tender.
