Harvest Salad
If you are looking for a simple fall salad that takes minutes to make, then this is the one! It has me convinced that I need this in my weekly fall menu. It's not only packed with one of my favorite fall fruits, pears, but it combines autumn flavors that will compel you to take one more bite! It pairs well with a pumpkin soup or top with some protein to create a delicious meal.
Ingredients:
Salad:
1 bag of spring greens or romaine lettuce
1 Pear (I used a Bartlett variety), thinly sliced or chopped
1/4 cup dried cranberries
2-3 Tbsp. pecans
1/4 cup cheese of choice
Dressing:
1 1/2 tablespoons extra-light olive oil
1 1/2 tablespoons apple cider vinegar
1/2 teaspoon onion powder
2 teaspoons Dijon mustard
2 teaspoons maple syrup
1/8 teaspoon salt
1/8 - 1/4 teaspoon pepper
Directions:
In a large bowl add greens, top with pears, cranberries, pecans, and cheese.
Dressing: Place all the ingredients into a small bowl and whisk until combined. Drizzle over salad or add as needed.
*For additional protein - cooked chicken, chickpeas, or pepitas.
