Ingredients:

Scones

  • 1 cup whole white wheat flour

  • 1 cup all-purpose flour

  • 1 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1/2 tsp. salt

  • 1/2 cup light sour cream

  • 1 large egg

  • 1/3 cup sugar

  • zest from 1 large orange

  • 1 stick of butter, frozen

Glaze

  • 3 Tbsp. freshly squeezed orange juice

  • 1/2 tsp. vanilla extract

  • 1 cup confectioners' sugar

  • 3 Tbsp. unsalted butter, melted

Directions:

  1. Preheat oven to 400 °F and line an 18"x13" baking sheet with parchment paper.

  2. In a bowl combine, both flours, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together sour cream and egg until smooth.

  4. In another large bowl, mix sugar and orange zest. Add flour mixture and stir until combined. Then, using a grater, grate butter into the bowl of the flour mixture. Using clean hands, gently work the butter into the mixture until it resembles crumbs. Add sour cream mixture to the bowl until combined. Don't over-mix the dough. The dough will be slightly sticky and crumbly. Using your hands, form the dough into a ball.

  5. Place dough on a lightly floured surface and pat it into an 8-inch wide, 3/4" thick circle. Cut dough using a knife into 8" triangles. Place scones onto the baking sheet.

  6. Bake for 16 minutes or until the tops of the scones begin to turn a light brown color. Allow scones to cool on the baking sheet for 10 minutes before moving them onto the cooling rack.

  7. Prepare to make the glaze. Combine all ingredients in a bowl and whisk until smooth. Once the scones are cooled, use a spoon to drizzle the glaze over each scone. *

*Tip: For easier cleanup, place the baking sheet back under the scones cooling on the baking rack; this will catch any glaze that comes off the scone.
