Banana Oat Muffins

There is something that I love about this banana muffin recipe.

It could be they are loaded with wholesome ingredients (bananas, oats, & whole white wheat flour). Or the fact that they are so deliciously moist you may find yourself eating two!

It's a simple, one-bowl recipe that is easy to mix up and bakes in 20 mins, just in time for the afterschool snack rush! I occasionally like two of them with a cup of coffee in my breakfast rotation.

I hope you will enjoy them as much as my family does.

Prep: 10 mins. Cook Time: 20 mins. Makes: 12

Ingredients:

1 cup whole wheat white flour

1 cup rolled oats

1 tsp. baking soda

1 cup (2 large) mashed bananas (ripened)

1/4 cup unsweetened applesauce

1/2 cup chopped walnuts (optional)

1/4 cup olive oil

1/2 cup packed brown sugar

1 egg


Directions:

1. Place all of the ingredients into a large bowl and gently mix until incorporated.

2. Line a muffin tin with paper baking cups and fill to 3/4 full.

3. Bake at 350 degrees F for 15-20 mins.
